This Works...But Don't Forget Marcella Hazan and James Beard

If you already own Chef Lai's 'Pasta For Wimps' (2005), also with photography by Moshe Cohen, you might find this book to be very similar. I've read the earlier reviews, I have had a pasta class with a chef in Italy and I have made my own pasta for years so let me be a contrarian. In a way this IS a book for beginners but it is not comprehensive enough to serve a beginner. Chef Carlo Lai makes all his dough with plenty of eggs and only uses durum semolina flour. Plenty of Italian chefs use 'Doppio Zero' ('Double 0'), a finely ground wheat flour somewhat akin to America's all-purpose flour but as fine as Wondra. In her book 'Essentials of Italian Cooking', Marcella Hazan opines that semolina is best for making dough that will be extruded into shapes and dried. She uses Doppio Zero in Italy and All-Purpose in the U.S. because she finds it easier to work with and full of (different) flavor. She includes some 117 pages of recipes in that book that are also suitable for beginners. James Beard's 'Beard on Pasta' is similarly valuable and is aimed at the American market. Both are available on Amazon. Far from all Italian pasta is made with eggs. In our class, the chef used Doppio Zero flour (I get mine by mail order from a U. S. source), water and a bit of olive oil to make an easily worked dough and then he went on to demonstrate various shapes for noodles made with it, other than by extrusion. The lesson--beginners don't start with a semolina dough...and people who are averse to using a lot of eggs can still make pasta. You would not know that from this book.
Probably I've belabored that point (sigh.)

Moving on, Carlo Lai writes with an engaging and friendly voice and photos of him by Moshe Cohen show him to be a lively, likeable person. Some of Mr. Cohen's fine photography serves an instructional purpose and the others add interest. The whole package leads one to think: yes! I can DO this, too! The book opens with photos and a brief description of the basic tools one needs to produce pasta and the sauces presented later. Unfortunately, when it comes to pans, the photo shows an enamel lined cast iron pan from a famous French firm. That will work later. Initial cooking of pasta requires a kettle that will hold plenty of water and one of those is not shown. Similarly, the colander pictured has far too few holes for rapid drainage--and I had to look carefully to note any holes at all.

Back to the dough: variations are given and they are of the type that introduces herbs, chili pepper or tomato or spinach into the basic semolina egg dough. Even beginners can color their pasta if they choose to! Next (and later), sauces are introduced and their recipes are given. None of these will tax the cooking skills of anyone who is not a rank beginner since the step by step procedures are given and are understandable. All of the sauces are very popular in Italy and America. They include Amatriciana, Bolognese (Ragu or meat sauce), Carbonara, Napolitana (a basic tomato sauce), Pesto (herbs, garlic, pignoli) and the basic Béchamel used with variations to moisten and bind lasagna dishes. My quibble here is with the chef's decision on the 'primavera' (Spring vegetables) sauce: the 'vegetables' are pretty much cherry tomatoes. I was hoping for a standard Italian version having more color and a range of textures. Cuts of pasta presented include spaghetti, fettuccini and sheets--all easily rolled on an inexpensive hand-cranked machine (provided one has a sturdy overhang on ones counter to clamp it to.) Vaccuum clamp models are 'the Devil's tool', always losing grip. Recently, I purchased and reviewed a 'mastering pasta' book on Amazon. A basic tip from that chef was that the pasta and the sauce should be simmered and stirred together until they 'became one thing.' I am of that school. Chef Lai just says toss it through (more or less.) Finally, there is a short section on one of my favorites--gnocchi! Chef Lai presents both the potato and flour variety and the 'Romana' classic that is made with semolina; not durum semolina, he says. (Readers need to look carefully in the section on ingredients to understand the difference.) The index in my e-publication advance copy did not appear to have been finalized. It works but I bet a hard copy will have a more detailed index. Buy this book for the sauces...but don't forget Marcella and James Beard. New books are not necessarily better ones.

A simple guide for the beginner

OK so in case you didn't know it my all time favorite food is spaghetti. I could it eat it every single day. Blame my dad...he too is a spaghetti freak. So when I saw this book available on Netgalley* I just knew I had to read it.

Right from the start this cookbook sucks you in. A great explanation at the start of the book on the different tools and ingredients you will need to make your own yummy pasta dishes. Most importantly each recipe has multiple pictures with it. I hate when I read a cookbook that doesn't show the finished product. I'm always unsure if that is how it is supposed to look. With this book you not only get to see the finished project but you get to see photos of the dish being prepared.

As the title suggests this is the perfect book for someone who is a beginner at making pasta. The recipes are not overly complicated and the instructions are clearly stated. I love that there is also a recipe that uses eggplant to replace noodles. I wish there had been a few more vegetable noodle recipes as that is a big trend now with products like the Veggetti and Spirooli that make noodles out of veggies. But I wont fault the book for that since it encourages people to make their own home made noodles.

There are at least six recipes I cannot wait to try out and make. All in all this is a great book and I would recommend it to anyone who is looking to do more of their own cooking at home.

Doctor of interfaith Divinity and 18-year death midwife St. Pierre introduces the practice of assisting the dying as they transition from the physical world to the nonphysical. The book serves as a guide for professionals who frequently encounter death: nurses, hospice workers, etc., as well as those preparing to serve someone close to them during the last days. St. Pierre stresses the ability to sit with acceptance and love in the presence of pain and suffering and to honor the choices and belief systems of the patients. She also teaches methods of matching their states of consciousness to stay connected throughout the experience. Allowing for patients' different backgrounds, the author includes prayers, breathing and meditation techniques from various spiritual traditions as proper preparation for the role as conduit for divine energy and of the creation of a sacred space. A brief discussion of brainwave frequencies and the 13 phases of death--charted as "the Deathing Spectrum"--help to demystify the process, as do stories from St. Pierre's years of personal experience. Her tales of communication from beyond the grave may compromise her credibility for some, despite the bit of scientific support she gives for communication with the unseen world. References to death guides from myth and religion build appreciation for her profession, but it is when the author describes the intimate loss of loved ones (dogs, parents and best friends) that she connects readers on an intimate level with gritty, nearly uncomfortable emotion. About the Author
Joellyn St. Pierre, D.Div., is a former Broadway performer. An ordained interfaith minister, St. Pierre earned a Doctorate in Divinity with a focus on Death as a Transition. Since 1991, she has served as a death midwife with AIDS organizations, hospices, hospitals, and families. She resides with her family in Virginia Beach, VA.

An Essential Read

I have had a long journey to becoming a death midwife, and this book is the epitome of what death birthing is about. It is highly sensitive, intuitive, and instructional for those on this path. The detail of spiritual preparation for this work is completely universal regardless of what one's outer beliefs are. I have not found any other book as saturated in truth and love aside from Dr. Lonnie Edwards' Spiritual Laws that Govern Humanity. This book must be the cornerstone of every death midwife's practice!

A New Approach To Something As Old As Death

To open this book is to open a jar of balm for the soul, a spiritual unguent to salve our wounds, the wounds of the living, while we sit with those who die. St. Pierre teaches how to communicate to the dying when the body is too frail for words. She presents a step-by-step program on how to hone one's subtle connection to the greater consciousness in order to respond specifically to individual people as they die. It's not a cookie-cutter death-care program. It is an indispensable book on the new science of Death Midwifery, a roadmap for those who are taking the trembling final walk with family, friend or client. In this eloquent mix of science, art and spirit St. Pierre's words heal the confusion and misunderstandings surrounding death and actively teach how to birth the death process. If you care for those who are dying, this is a must read

As a hospice Volunteer Coordinator, I am always looking for ways to improve care for my dying patients. I train people to sit vigil with patients and was looking for a book that focused on the spiritual aspect of caring for dying individuals - and I found it. This book was very helpful for me, and I appreciated that it was respectful of all different faiths. It gave good examples on how to incorporate prayer and other rituals to bring meaning to the end of life, and to provide comfort to patients and their families (and even to myself as I care for them).

I was very pleased with this book and definitely recommend it if you are in this line of work.

This book helps to fill some of the gaps with a good attempt to show the important relationship between neuroanatomy and clinical neurology...Each chapter is illustrated by very helpful coloured line drawings and photographs. Each section is summarised by a table of Key Points which give a helpful summary of the text...This book is reasonably priced and certainly worth purchasing by any veterinarian with a substantial caseload of neurological patients.

Informative and Practical

This Veterinary Neuroanatomy - A Clinical Approach is an excellent contribution to the veterinary neurological literature.
The clinical anatomical correlations were well done.
The two authors represent considerable expertise in basic neuroanatomy and neurophysiology combined with abundant clinical experience.
This combination makes this a most worthwhile text for the veterinary student, veterinary practitioner as well as trainees in neurology.
I highly recommend this text.

Review of Neuroanatomy book ( indeed a best book!)

Veterinary Neuroanatomy: A clinical Approach is another addition in the field of veterinary neurology. But this is very different from many other veterinary neurology textbooks available in market. It is not intimidating to students and veterinarians because of the presentation of subject matter and size of book (nearly 180 pages). I have gone through many neurology books during my study, clinical practice and registration examination preparation but I liked this book a lot in many aspects ( before this I liked veterinary neuroanatomy and clinical neurology by de Lahunta a lot). Some of important features ( that I liked and was helpful to me) are:

Each chapter starts with MUST KNOW FUNDAMENTALS that leads to clinical pathway with less or very few roundabouts. When you finish the chapter you come with a CONCLUSION not CONFUSION ( many neurology textbooks did second to me). For example, chapters on reflex and motor system and vestibular system leaves no doubt about WHAT NEXT. Many difficult concepts are explained in very lucid style, that tempt you read ( sometimes you can not put down the book for hours).

First three chapters starts like a ladder which decode the subject matter gradually, hence it becomes easy to grapse the core concept. For many people studying neurology is very dry but I liked the language of this book and it is not arid. It gives you concepts( Chapter 9, 10 and 13 are excellent example for this).

Another good quality of this book is its pictures. Most of them are original and great and some pages seem to be overwhlemed by pictures. Easy to remember.

KEY POINTS in each chapter helped me a lot during revision. In 180 pages, you come to know what you must know in neurology as a student and as a general practitioner.

This book is well-written, concise and full of color diagrams and photos that all add to the learning experience. Where other books (such as de Lahunta) may be more detailed, they can be harder to read and sometimes you don't see the wood for the trees (though I'm still learning from de Lahunta on the 3rd or 4th read and it makes an excellent reference text).

Thomson and Hahn have distilled out the essentials of veterinary neuroanatomy and provide it in a clear and concise manner - this lays an excellent foundation for further reading if needed or desired. Concepts are used to explain certain points or simplify an anatomical or physiological system, and these are, for the most part, a useful way of thinking about things. I only wish this book had been written several years ago at the start of my career!
